Tasty Vegetarian Tandoori Confetti Salad + Curry Mayo Dressing | Healthy Indian Cuisine


Tandoori Confetti Salad, a healthy and vibrant
salad with a punchy tandoori zing! This one is a sure winner! To first make the tandoori marinade, we start
with some hung curd,
to which we’ll add some ginger garlic paste green chillies
coriander powder cumin powder
garam masala aamchur
tandoori color kasturi methi
lime juice and salt Mix it well and we’re on to the confetti vegetables! In a large bowl, combine
some babycorn onion
paneer cubes (cottage cheese) sweet corn
red, green and yellow capsicum (bell peppers) Feel free to use your favorite vegetables
as substitutes! Add in the tandoori marinade and mix it up
well. Let this marinate for atleast an hour. Meanwhile, we can prepare the curry mayo dressing. Start with some yoghurt,
mayo, curry powder,
chaat masala, mint leaves
and salt. Mix together properly. To cook the vegetables, take some oil on very
high heat. Saute the vegetables until they are crispy. The high heat ensures that they still have
a crunch! Remove them to a bowl and let them cool completely. Make small cups out of lettuce leaves. Fill each with the confetti vegetables. Drizzle on some curry mayo dressing and top
with some gorgeous pomegranate seeds. Your colorful tandoori confetti salad is ready
to dig in!
