Namaskar. Welcome to nishamadhulika.com. Today we will prepare sweetcorn vada. These are really delicious vadas. You can make it while on your day off, you can also make it and serve as snacks. Let's start making Sweetcorn vadas. We have taken 2 cup frozen Sweetcorn, you can also use fresh sweetcorns. Put these in a jar. Grind coarsely. Sweetcorn is coarsely ground. Take out the sweetcorn in a bowl. Let's mix veggies and spices to it. Add 1 finely chopped capsicum. Add 1 finely chopped carrot, 2 to 3 finely chopped green coriander, 2 to 3 finely chopped green chili, 1 inch piece ginger grated. Add 1 tsp coriander powder, 1 tsp cumin seeds, 3/4 tsp red chili powder. You can adjust the quantity of red chili as desired. Add 1/2 tsp dry mango powder, 1/4 tsp turmeric powder. Using turmeric is optional. Add 1 tsp salt. Add chickpea flour. Mix all ingredients well. All ingredients have mixed well. Dough is ready for making vadas. Put oil to heat. Take out dough. Bind it. You can make the vadas big or small as desired. Press and give shape of vada. Keep it. Vadas are ready. Let's fry these. Check oil. Put some dough in oil. Dough is fried well, oil is hot. Medium high hot oil is needed to fry these. Put vadas to fry. Meanwhile till these are fried, prepare rest of the vadas. Vadas are brown from beneath, flip them. Keep flame medium or medium low. Fry well until crisp and golden brown. Vadas are fried golden brown and ready. Take them out. Hold the vadas like this on the ladle, on the edge of the wok so that extra oil drains back. Keep the vadas in a plate. Fry all vadas likewise. All the vadas are fried and ready. It takes 5 minutes to fry vada once. 10 vadas are made with this quantity of dough. Yummy Sweetcorn vadas are ready. These are very delicious and easy to make. Be a little cautious, when you grind sweetcorn, grind it coarse. If it is grinded much, its juice will come out, lot of chickpea flour will be needed to make dough, due to which taste and texture won't be good. You can serve sweet corn chutney, tomato sauce, or any favorite chutney you desire. These taste amazing when served steaming hot.
