There are "field pumpkin" varieties that have been bred specifically for sweetness to be used in baking… they are called pie pumpkins.

I make homemade pumpkin pie every year using sugar pie pumpkins, and they’re delicious! The key is drawing your pumpkin purée using cheese cloth in a colander, that’s been placed in or over a large bowl,over a 24 hour period.period.

You can buy actual "pie pumpkins" at Walmart etc.. they are smaller and have a thicker stem, you cook like regular squash and make the pie as usual with a good recipe they taste just like the canned pumpkin pies.
People should listen to what Josh said. The FDA hasn't made a rule about what you can call pumpkin, which means that the companies canning "pumpkin" can call their squash "pumpkin" if they want.

Growing up, a day or two after Halloween my parents would cut down, boil, blend, and freeze the pumpkin from our jack-o-lanterns. That's the pumpkin we used for the pumpkin pie we'd have for Thanksgiving and Christmas. I always loved the idea of being thrifty and re-using the pumpkin for other Holidays. I've always loved that real pumpkin vegetal taste because of it. A tip for anyone else who tries it, just thaw and drain the frozen pumpkin before mixing it into the pie filling to avoid the more watery texture.

My pumpkin pie is real pumpkin, and it's my great grandmother's recipe. It doesn't look like either of these pies at all and it is absolutely amazing. Store bought pumpkin pie is nasty in comparison.

My family makes pumpkin pie with fresh pumpkin every year. We cut up fresh pumpkin and break it down for pie.
But all pumpkins are winter squash, so what's used in pies is technically "pumpkin"… also if you go to the grocery store and buy a "sugar pumpkin" to roast and puree yourself (the ones with stickers that proclaim their use in pies), those are part of cucurbita pepo.

Me and all generations of my family have always used "field pumpkin" for pumpkin pies never ever used canned pumpkin. And it's never been as watery as that, and it is absolutely delicious.

My grandma grows and uses pumpkins she calls "pie pumpkins" to make pies. I looked it up, and they are also called sugar pumpkins.
