[lauren] can we start now please? [lauren] what’s up! it’s lauren from hot for food back with another RECIPE?! [lauren] so today we are going to do a RECIPE?! [lauren] but the only thing i know that i’m going to do is make waffles! [lauren] because i got a new waffle iron. if you watch my personal youtube channel, you would’ve seen [lauren] a few weeks ago, i said “we really need to get a waffle iron!” [lauren] and so, i did. [lauren] it was only $30 on sale, pretty inexpensive appliance. [lauren] and now we can make sweet waffles, savoury waffles, falafel waffles, pizza waffles, [lauren] pancake waffles, grilled cheese waffles, potato waffles, mm breakfast sandwich waffles? [lauren] spaghetti waffles? [lauren] basically anything can be waffled now so i’m very excited. [lauren] we’re gonna make some today. i’ve never used one of these in my entire life which is crazy! [lauren] i can’t believe i have never owned one! [lauren] so we’re gonna see what’s in the fridge, what kind of leftovers i have going on and make some type [lauren] of WAFFLE MAGIC. [lauren] as usual, we are going to the fridge to see what we have and i know i have a lot of leftovers [lauren] because it was just thanksgiving on the weekend for us here in canada. [lauren] i’ve got leftover almond feta. [lauren] i’ve also got some leftover potatoes i cooked and seasoned. [lauren] that nobody really ate at thanksgiving. [lauren] i’ve got leftover lasagna.
[john] lasagna waffle? [lauren] no, not a lasagna waffle but i think i did mention potato waffle. the most logical thing would be to mash up these potatoes. [lauren] which i think we should do and make some type of sauce with the leftover cheese? [lauren] because otherwise we’re just making a waffle from scratch with like batter [lauren] and we might as well just use the potatoes. [lauren] and i’ve got lots of greens. so we can put that on top with the sauce. [lauren] okay so let’s work on these potatoes, [lauren] so i’m more into a savoury waffle anyways so i think potato waffle’s good. [lauren] plus, being that we just had thanksgiving but you guys watching in the US have thanksgiving coming up, [lauren] now you know you could make a potato waffle with your leftover potatoes or leftover mashed potatoes [lauren] so i think that this is the perfect idea on how to use leftovers in our RECIPE?! [lauren] i’m gonna run these through a food processor to get them really smooth, [lauren] we should caramelize some onions and put them in there in the potato. [lauren] kinda like to hold it together because i think waffles normally have eggs in them, [lauren] to make them really like stick together? [lauren] so caramelized onions is another good binder, let’s do that! [lauren] so i’m just going to cut up this leftover onion into thin slices and we’re going to caramelize this in a pan with a little bit of oil. [lauren] and get them nice and brown. [lauren] okay so caramelizing onions takes anywhere from 10 to 16 minutes depending on how many onions you’re doing [lauren] or whatever so these will just be a little longer. [lauren] we are going to season this a little bit. there’s already salt, pepper and a little bit of basil on the skin of these [lauren] um, so i’m just going to add more spices. [lauren] nutmeg, chili powder and maybe a little more basil. [lauren] and we’ll put a clove of garlic in there. [lauren] okay so i think these are close to done, they’re good enough. [lauren] little stuffed in here. [lauren] i’m gonna need some liquid as well, i forgot. so i wanted to make a buttermilk, [lauren] which if you’ve watched my other videos, i explained is: [lauren] almond or soy milk with apple cider vinegar. [lauren] and you kinda just let it sit. i should’ve done it like 10 minutes ago but anyways [lauren] we’re gonna do half a cup (of milk) and a teaspoon (of apple cider vinegar). [lauren] stir that together and let it set for 10 minutes. [lauren] basically it curdles and that’s like buttermilk! [lauren] plus you get a little bit of acidity which is always good to balance things out. [lauren] woahhh [lauren] i think it needs a little bit more salt, and i’m gonna add nutritional yeast and we’re ready for the waffle iron. [lauren] it’s good though. [lauren] i like the nutmeg. [lauren] close the lid, plug the cord in. [lauren] the ready light will come on to indicate the unit is heating. [lauren] when the ready light goes out after 5 minutes, it is ready. [lauren] the iron is ready! [lauren] it’s very hot. [lauren] okay! i think i have to wait like 4 to 6 minutes, [lauren] i set the timer for 5 minutes. [lauren] i think the key with waffles is just like pancakes, it’s patience. [lauren] it looks good. [lauren] if i open it and it’s not crispy, then the whole thing is ruined. [lauren] cos it’s just going to peel apart. [lauren] i’m scared!! okay don’t burn yourself, [lauren] i think i wanna go a little longer. a piece stuck! dammit. [lauren] or is it done? oh, it’s not even crispy. sh*t. [lauren] how do you get it out?! [lauren] i’m afraid i’m going to rip it so i’m just going to dump it onto this cutting board. [lauren] ayeye okay. [lauren] shit! [lauren] mm, nope! [lauren] okay friends, we’re gonna have to add flour and gluten cos there’s nothing holding this thing together. [lauren] we’re saving this. so this is just like a mashed potato with a very weak crust. [lauren] so we’re gonna add this to a bowl. [lauren] i’m thinking i’m adding all purpose flour and maybe some baking powder so that it poofs! [lauren] alright, we’re gonna add half a cup of all purpose flour, [lauren] i’m gonna add half a teaspoon of baking powder, [lauren] and i’m gonna add another tablespoon of nutritional yeast. [lauren] we have to salvage this, people. [lauren] i’m just gonna add another quarter cup of almond milk. [lauren] alright, let’s do this again. [lauren] less batter this time. [lauren] you have no idea what’s happening under here! [lauren] why not they make like a clear top? [lauren] does it smell like it’s burning? [lauren] it’s a little crispy now. [lauren] maybe this waffle iron sucks! [lauren] okay, well [lauren] that’s better. so this one looks good, i guess we’ll just make a couple more, we’ll see how many we can get out of this. [lauren] okay i’m going to make a quick little fresh tomato salsa type stuff for the top. [lauren] so we’re gonna dice this up and add some cilantro, salt and pepper. [lauren] i’m just using shallot because i don’t have any red onion. [lauren] alright i’m going to lightly cook this spinach to wilt it, [lauren] there’s some residual oil and onion juice in this pan from when we caramelized the onions so that’ll be good. [lauren] so you don’t need to add anything to this. [lauren] so these waffles will be perfect with vegan sour cream or cashew sour cream which we have a recipe for. [lauren] i’ll link below. except we’re doing a RECIPE?! so i have leftover almond ricotta [lauren] which is from our lasagna roll ups, if you recall. [lauren] i’m gonna take this and put it in a blender. [lauren] and we’re going to liquify it into more of a cheese-like sauce. [lauren] i’m just gonna add about- i don’t know, one to two tablespoons of liquid here. [lauren] almond milk. [lauren] and a little bit of apple cider vinegar to just tart it up a little bit cos it’s already cheese flavoured. [lauren] okay, it’s thinned out enough but i’m just gonna add a little bit of oil cos i think that’ll make it a little [lauren] smoother. [lauren] it is almonds, so it’s not gonna be as smooth as cashews. [lauren] but i think this will just kinda like beef it up. [lauren] well, would you look at that. [lauren] there’s our savoury potato waffles, topped with spinach and tomato salsa and almond ricotta cheese! [lauren] these look delectable! now i would say it’s a successful RECIPE?! [lauren] we just had a little bit of trial and error at the beginning there [lauren] tryna get that waffle to stick and stay together. [lauren] and yet again, we were saved by gluten. [lauren] mm! [lauren] oh, very savoury and onion-ey [lauren] mmm! [lauren] mhm! [lauren] so much better than a sweet waffle! [lauren] i’m gonna eat that whole tray, [lauren] i made it look like a waffle party platter but you could also just leave them whole. [lauren] make one big stack for yourself. [lauren] all the flavours really came together. they’re on point! [lauren] we had to play a little bit with that batter so i don’t have an exact recipe for you [lauren] cos it’s a RECIPE?! [lauren] i’m gonna try it again.
