How to Make Som Tum – Thai Green Papaya Salad ส้มตำ | Taya Kitchen


Hi guys, my name is Taya and welcome to Taya Kitchen. Today we are going to be making Thai green papaya salad. Otherwise known as some Som Tum Thai. it’s definitely It’s definitely one of the most delicious recipe that you can make. Using this little guy here. So let’s get cooking..good looking! To put your papaya salad together you are going to need a vessel that is going to house all of these beautiful ingredients. And also some where for the dressing to mingle with the salad, making something incredible. Traditionally you’re going to be using a
modern pestle such as this. This has sort of has a ceramic base and a wooden pestle. Okay, this wooden pestle is perfect for bruising your ingredients. But you wouldn’t be using this guy if you are making a curry paste. Cos that involves a lot of pounding, and even though I love going nuts in the kitchen. If you make curry paste in this little guy eventually it’s going to crack. And then you’re going to have to get a new one, which is a pain in the butt. If you don’t want to spend money a mortar and pestle, You can still make papaya salad
using a bowl and a rolling pin. Okay! This is a great student low budget version and I’m using my trusty dumpling rolling pin. It’s one of my favourite rolling pin..
If you have a favourite rolling pin? It’s been around forever. And again it’s just that pounding motion. You don’t want to pulverise the ingredients The idea is to bruise and bring it together. Okay guys, so lets make this salad. First things first, you want to put in your garlic. So I have a clove of garlic, just cut in half lengthways. Throw that in. Also a chilli.. So, as much or as little as you can handle. These little guys here they’re quite furious. So i’m just going to put one in, and
if you like you really hot slice it. I’m a bit of woose, bitter war so I’m going to put it in a
hole and inches proves it the next thing you want to put in actually want to
start putting things like parm sure at the beginning so this is palm sugar
which have been chopped up you can also just microwave it as well so that’s
going to go in to the mortar and pestle now alright and now you’re just going to
pound it until you have a sort of a medium x
pace make sure one hand is over the lip of the water so don’t get chilly meeting
at your face so next up we’re going to put in some dry shrimp this is a must
going to give it a lovely undertone a depth of flavor so I’ve got quite big
dried shrimps I’ve just chop them up a little bit soak them in some water and
then twice them in the walk for a couple of minutes just so there’s not lovely so
that’s going to go in so a generous tablespoon of fleas again howling that’s
true and you’re just patting to release the flavor you don’t want to polarize it
alright next we have beans so I’m using green beans you can do snake means if
you want again we just want to bruise the little guy in the cut rabbit two
inches long throw there and by this time your ingredients stuff starting to get
quite thick especially with that palm sugar so you’re going to spoon in town
and all that food okay i also add in this time my lime so i am using a whole
line i’m putting half of it actually in this on thumb and just want to pound it
and get a bit of juice out and i’ll squeeze the rest a little bit so that
guy’s going to go in so now that the lines have andrews and same with the
beans and the garlic and the palm sugar we’re going to start to dress the salad
so the other half of my line just squeeze it in okay please don’t use any
pre-made lime juice reconstituted use fresh things especially in a salad
because I’m it’s going to make a huge difference to add flavor we’ve got fish
sauce have to be fish sauce in this one make sure you use good ficials as well
and I use megashare fish sauce because it’s the best and to give it
little sourness I’ve got some Tamron some people call it extract some people
at cost and trade just a couple of teaspoons okay they quite give it a bit
of a 3d knife you sell as well so I so it’s pretty much getting there all right
now we’re sort of stuck to blend everything together like that getting to
the business end of the salad next up we’re going to add in our pyar being
shredded already ok I’ll show you how to shred them and just folding that through just freezing them ever so lightly
beautiful ok still should have a bit of crunch in there next up we’re going to
add in our Tomatoes ok we’re going to just sort of like lightly buries them
again just to get the juices at and as well as that I like a little bit of
Kerry in mind just half cup to add a bit of color and texture perfect counting
folding like a good market lady all right this is going fantastic and last
but not least roasted peanuts ok so in the old school days ties were in half
ovens so they’re not so grow stood in the pan which using this beautiful
distinct markings ok they’re really quite nice these have been chopped up a
little bit so I’m going to throw them in that’s going to thicken the salad a
little bit as well but I’m to preserve some for sprinkling on top
to make everything look sexy okay so putting everything together now oh god
