Slow-Smoked Baby Back Ribs (Gas Grill Method)
Skin the ribs by removing the membrane
Cover ribs in dry rub and rub it in
Let it sit for 4 hours or overnight in the fridge
Create Smoke Packet: Aluminum Foil – 1/2 Dry Smoking Chips & 1/2 Smoking Chips soaked in Apple Juice (Apple Chips Recommended)
IMPORTANT – Indirect cooking method – Turn on burner on side and place Smoke Packet on hot burner
Once smoking begins, add ribs over the OFF BURNER (No Heat Side)
Smoke the ribs for 3 hours
Place the ribs in aluminium foil meat side down
Add 1/2 cup of Apple Juice on top of the ribs
Close foil (careful not puncture the foil with the bones) and cook ribs meat side down for 2 more hours
Unwrap ribs; flexibility indicates they are nearly done
Place ribs back on grill and ladle your favorite BBQ sauce heavily
Cook ribs meat side up for 1 more hour
