How to Cook in a Tiny Kitchen



hi I'm Melissa Clark I'm Jamie young melissa is gonna be helping me deal with my tiny kitchen so Jamie you just moved into this apartment you were living in the city and was your kitchen any bigger actually this kitchen is a huge improvement from my old kitchen I've just always had a small kitchen and I this seems like a palace to me but it's still from normal standards it's still pretty small some people might think it's Mel you can't open the refrigerator door all the way well I lived in New York my whole life and I have never had a kitchen any bigger than that and so I thought I would show you this amazing shrimp dish that I used to make in my little kitchen when I had one before I finally finally got a slightly bigger one so it's shrimp with feta garlic capers and cilantro and it's really good and sounds good we're missing the shrimp okay but now I have two all right I see this is the problem with the small kitchen it's like where do you put that people always ask me about seafood and chicken they say when I get home from the supermarket am I supposed to just use it or should I rinse it and I always say well the last person who touched it was probably a fishmonger or a butcher who's been touching a lot of things so I always give it a rinse so I'm gonna use three cloves of garlic for this I'm gonna get my red my lemon ready I'm just gonna add a little bit of lemon juice at the end to finish the dish so basically the only thing I'm chopping is I'm slicing this lemon and I'm gonna chop up this cilantro a little bit like I said as little chopping as possible means your spend less time in your tiny tiny kitchen now here's a trick create extra counter space in your teeny-weeny kitchen by buying a big cutting board and laying it across your sink so if you don't happen to have a table that you can go chop on you could even chop into your whole meson Plus right here now normally I don't make this dish with feta cheese I leave it out but a reader had written in to Michael Lomonaco for the recipe contest that you guys are doing and she mentioned um I think she was from Mexico and she mentioned that she makes her enchiladas with feta cheese and I thought wow feta it would you know I can crumble it you don't have to chop it again no chopping and it would make an instant sauce kind of an out of creaminess and a richness to this dish when you have good ingredients and careful with them it's gonna be great so you look how they look at that look how beautifully the feta is melting is that nice I'm gonna use lemon finish you could also use white wine you just need a little liquid okay this is a trick see how I'm putting my hand over the lemon juice I'm catching the seeds that fall okay see that now the shrimp is all completely pink and opaque this is where I taste it okay now this is not the most beautiful presentation but the fact is you have a really small kitchen you don't have time for like big fancy presentations and you're making yourself an amazing healthful inexpensive meal so you know what if it doesn't look like a restaurant food you just forgive yourself it's fine well I'd like to get a cutting board like that nice one and put it over my sink to cut with and I like the idea of making the sauce right in the pan along with the shrimp that achieves came out so creamy and so delicious and I'll show you it was crumbled in the pan so I can do that
