How to Cook Binignit Recipe

I’m Vanjo Merano Today we’ll be cooking Binignit here are the ingredients for this recipe “kamote” or sweet potato purple yam or “ube” “saging na saba” (saba banana) muscovado sugar. You can also use “asukal na pula” or brown sugar coconut milk or “gata” ripe “langka” (jackfruit) “gabi” (taro) tapioca pearls or “sago”. This is our alternative ingredient for “landang” glutinous rice flour aside from these ingredients, we’ll need water let’s start In a big cooking pot, add in here the ingredients: coconut milk or “gata” here goes the coconut milk I’ll put in here everything. I used 2 cans of coconut milk, equivalent to 4 cups add water mix let it boil once boiling, we’ll add the other ingredients the mixture is starting to warm up once it’s warm (not boiling) you can add the “kamote” or sweet potato let’s put it here carefully then let’s add the “ube” or purple yam let’s add in here the other ingredients. Here goes the saba banana here goes the jackfruit. It’s a ripe jackfruit a canned ripe jackfruit will also do for those who doesn’t have access to get fresh ones here goes the taro then mix wait for the mixture to boil the mixture is now starting to boil let’s mix it continue cooking under medium heat for 8-10 minutes with cover after 8-10 minutes, you’ll notice the sauce thickens now, let’s remove the cover and check this mix it’s starting to thicken but not yet very thick so let’s now add the other ingredients while boiling, we’re also extracting the flavor of jackfruit and saba banana so we can say, we already have the initial flavor for our dish to make it more delicious and sweeter, let’s add the muscovado sugar here goes the muscovado sugar unrefined brown sugar will also do it’s the usual sugar for binignit that’s the difference between binignit and ginataang halo halo in Tagalog’s Ginataang Halo Halo, we’ll use the regular white refined sugar another difference with Binignit is using the ingredient called Landang Landang is like an irregular shaped brownish tapioca pearl and it has a sweet flavor but since we do not have it here, we’ll be using a regular tapioca pearls or “regular na sago” this is our alternative for landang. Then mix it then continue cooking for 8 minutes more set in between low to medium heat cover the pot while cooking, let’s prepare the glutinous rice flour here’s our glutinous rice flour remove the cover then mix again there. it’s ready it’s much thicker now. But do you know? In binignit, it usually doesn’t have “Bilo Bilo” or glutinous rice balls instead of bilo bilo, we usually use the sticky rice or the glutinous rice flour like this one if you’re not familiar with this ingredient, this is also known as “galakong” add water then mix I’m doing this to avoid the glutinous rice or “galakong” to coagulate mix it very well and make sure it’s diluted in water so later when we add this to the pot, it will not coagulate pour it here then mix right away as you can see, it’s thicker now continue cooking. It depends on you how thick you want it in my suggestion, cook it for a longer period of time without cover if this is your desired consistency, check if the ingredients are already soft especially the purple yam, and sweet potato once the purple yam, sweet potato and taro are soft, that means the dish is ready then transfer to a serving bowl then serve here’s our binignit let’s have a taste. Look, while it’s hot this is best to serve while it’s hot I can smell the jackfruit, it’s so fragrant that is what I want to try first. I also like the colorful tapioca pearls Mmm~ It’s too hot *blows* it’s hot but nevermind Mmm~ I can really taste the jackfruit. Delicious. Even though it’s hot, it’s still ok this how I want for my Binignit or Ginataang Halo Halo I want consume this while it’s hot. But it depends on the mood. If merienda, then I want it hot if breakfast, I want this chilled now let’s try all the ingredients together. Purple yam, tapioca pearls, saba banana and sweet potato. There. let’s put it all together it’s hot but it’s alright. Let’s go! Mmm~ this is really a comfort food for me I like taking this with ingredients all together because the flavor compliments. Delicious! I like the flavor with saba banana, jackfruit and the texture of purple yam and sweet potato.
