Homemade Caesar Dressing Recipe – Low Carb Keto Salad Dressing │ Saucy Sunday

Welcome all! Papa G here. Today is Saucy
Sunday! It’s where we focus primarily on low carbohydrate recipes for sauces, condiments,
and dressings. Most of the videos will be short and to the point. Just something to
help add a little flavor to your low carbohydrate diet Let’s get started. For this
week’s episode, I present my homemade Caesar salad dressing recipe. If you liked
my ranch dressing you’ll love my homemade version of this American
Italian classic. Let me show you how to make it. The first thing we need to do is
finely mince about four anchovy fillets. Now I know some of you may think you
won’t like this ingredient, but please trust me. This ingredient is necessary to
get the overall flavor profile we need. Combined with all the other ingredients,
you won’t even know it’s there. So please, don’t omit it. To make our dressing we’ll
add about a cup of mayonnaise to a mixing bowl; add some heavy cream; some
creole mustard; minced garlic; about a teaspoon of dried oregano; ground black
pepper; our minced anchovies; 1/2 a cup or about 2 ounces of shredded Parmesan
cheese; and finally we’ll add some lemon juice. Mix well until thoroughly combined. Give a taste for salt. I thought it’d
need a little little hear so I added about a pinch. Cover and refrigerate for
at least an hour to allow the flavors to come together. When it’s ready, you’ll
enjoy one of the best tasting, low carbohydrate salad dressings you’ll ever try.
There you have it folks! My homemade Caesar salad dressing recipe. I hope you
enjoyed this video. If you did, please like and consider subscribing. Thanks for
watching and I’ll see you next time!

  • WOW! We will be trying this one for sure. Question: Would anchovy paste work with this? Because if so, I can make this without having to run to the store this morning LOL! Thanks Papa G!

  • I mostly really like many of Papa g's videos. But as a private chef of 40 years I can say this is NOT caesar dressing (even thought it does share a number of its components). It is a re-creation of the awful version (my opinion only) that is common in restaurants and bottled dressings nationwide. I am not saying that this is not tasty and loved or that it is not a good thing. But to me this is a shame because real caesar is as easy and as keto as it gets. It is at lest as simple if not simpler. Here's the real thing (thought you may not like it if you are convinced as he masses mostly are that what they are getting in restaurants and bottles is the real thing) . In a mini processor place:

    1. A tin of flat anchovies with their oil (people pay heed here – this flavor is essential as Papa G rightly notes and you can use more than you might think – next to the other strong flavors these will fade in dominance)
    2. A tablespoon of dijon (a must no lighter NO less hot versions please) mustard or teaspoon of dried mustard powder
    3. 1/3 cup grated parmesan reggiano (try not to use the died stuff in boxes)
    4. 2 teaspoons worth of freshly minced garlic (ugh to the stuff in jars but if you must ok)
    5. 1 teaspoon coarse black pepper.
    Prosess to a thick paste.
    6. Add 3 tablespoons fresh lemon juice. Briefly process.
    7. 1 cup of not too strong olive oil or veg half and half veg and strong olive oil. Slowly process this in.

No oregano, no mayo, no cream.

Again , you may not like this but this is very close to the real thing (minus the raw egg). And it is very keto.

  • As long as people are correcting mistakes Caesar salad is not Italian but was invented in Mexico by a chef named Caesar. Not from Italy at all. Love your videos.

  • Papa G! You're back! So glad to see you posting recipes again! How did your kitchen renovations come out? How long does this dressing keep in the fridge with the anchovies in it?
