EASY MEAL PREP ON A BUDGET // COOK WITH ME 2019 // CHEAP MEAL PREP + GROCERY HAUL



hey everyone welcome back to my channel in my last meal prep video you guys have really loved it this meal cart video is even better because it's like so easy it's 9 o'clock at night just call all my kids to sleep so if I can do this you can do it to it we're going to see just how long this takes we are going to be doing a couple different breakfast options some snack options and a really easy lunch option all these recipes are super healthy high in protein and just delicious and you're going to love them so let's get started it's quickly want to give you an overview of some things that we all need so I'm using Mexican cheese just need any kind of shredded cheese that you like some bell peppers this quinoa and brown rice with garlic is delicious and it's really easy to make because you throw it in the microwave some black beans fennel corn I got 2 rotisserie chickens just because like my family loves rotisserie chickens um oh you can use whatever kind of milk you like I use almond milk some peanut with some peanut butter plain Greek yogurt this is my protein powder I use it's just like a chocolate whey protein from GNC it's called chocolate supreme strawberries bananas they don't have to be on our left leg like my bananas but you'll need some bananas frozen blueberries got some raisins some celery and some eggs and you'll also need some salsa whatever kind you like so the first thing I'm doing is boiling some eggs for hard boiled eggs because that's an easy high-protein snack family for but also for my kiddos I absolutely love it and I'm going to show you how I do hurt with it so obviously just putting some eggs and water you don't want too much water in there I also put a little bit of salt in here once they come to a boil I'm going to set a timer for 15 minutes and let them boil for 15 minutes take them out and put them in some ice water that makes it very easy to peel although hard boiling eggs are super easy I'm the person that has had to google it five million times how to hard boil eggs now that I got that on the stove I'm going to preheat my oven to 400 degrees now I'm just going to quickly went to all my produce that I'm doing for the entire meal prep and for the celery sauce of course I'm going to cut the bottoms off first because there's a lot of dirt in there ovens preheating and they're starting to boil I recently just cut myself around here that was dirty so I'm just flipping over my cutting mat and I will have the cutting board link in the description box below if I just shared all my stories today it's on sale for like $26 and I've had it for years and I love this kind of word from Amazon so now I'm going to go ahead and just cut up everything that needs to be cut up so we can put this cutting board away and we're done with all the cutting for this meal prep to make it nice and fast and efficient so 2 of these I'm just cutting the tops off because we're going to bake some eggs in the oven and these for breakfast and then the other ones I'm going to chop up for our lunch bowls that we're having so for the eggs I'm just cutting off the top not too much and then we're going to go in and cut out the inside of this so here's one I'm going to do a yellow and orange because I feel like those are bright happy colors for the morning because I am NOT a morning person in any way shape or form okay that was easy I'm just putting these both in the oven on a 400 degrees for about 15 minutes so the reason I'm doing that is because the peppers are really hard to let get them to soften a little bit because the eggs are gonna cook super fast so again 15 minutes 400 degrees so now we're cutting up our peppers for our chicken quinoa kind of like a spanish-style lunch Bowl I always cut my peppers this way and it seems to blow people's minds I think I saw it right over I do this but look this is how the inside of your pepper looks there's no seeds anywhere and it's just easy and you're getting the most of your pepper seeing how much as one pepper got I'm actually not going to cut the second one because this is plenty this is just going to add a little bit of crunch to our at lunch bowls I'm just going to set my peppers aside and move on to the next thing and I'm just putting them in a glass bowl for a video purposes but you really don't have to be this extra so now what I'm doing is I'm making either you can make these for actual smoothies that you drink or smoothie bowls I like both it depends on my mood I absolutely love these bags who broke because they're reusable but I need to order more so I'm going to be using just a regular of plastic sandwich bags for this but I do plan on ordering were these reusable bags so I'm just using these old bananas again they don't have to be old but since they're going in the freezer it's fine they don't need to be beautiful and they're going to keep really nice and sweet I'm awesome thanks I'm going to get strawberry as well as frozen blueberries okay so I'm just gonna put one banana and three to four strawberries for each baggie I do usually love adding spinach to these as well because you can't taste it and just adds extra nutrients and iron but I'm out of spinach adding some blueberries this is all for your preference on what taste you like the most also my boys love these they are two and three years old and they actually love smoothies they call them shake shakes and they request them on their day late though we usually wind up splitting these most of things unless I meet two so I'm only doing three of these because I have a lot of breakfast items I'm going to be making this can also be a snack I mentioned smoothies vs. smoothie Bowl so when you put this in your blender is going to add whatever liquid you want rather that's like milk almond milk coconut milk you can even add your protein powder but to make it into a smoothie Bowl which sometimes I crave I usually add a little bit of ice to make a thicker consistency I add like a scoop of peanut butter sometimes chocolate protein make it like a thicker type of smoothie and then you can add toppings on top those babies with chocolate chips or some peanuts something so you have like a smooth texture and your crunchy texture but you're actually eating it what the suppose what you got my cutting board to my chicken cutting board I'm going to save the produce these are the kind of work I want to do my celery snap on there but I'm going to make has been picked the chicken off of the rotisserie chicken become and just being completely honest it grosses me okay so while Chris is cutting up the chicken are pulling the chicken off our timer is about to go off where our hard-boiled eggs as well as our peppers those perfect timing because they both need at 15 minutes see how these are looking those look ready yeah this is perfect because they're just slightly wilted and then we're going to put eggs in there and bake them for longer these work best when you can put spinach in the bottom just so that it like helps the way it cooks again I forgot spinach so all you do is just crack an egg right into your pepper and then of course everything seasoning because it's delicious it's gonna say basic but it's really not basic it's just that good that everybody likes it and then a little bit of Mexican cheese because I love cheese so I'm putting these backing for anywhere from 15 to 20 minutes I'll check them around 15 minutes again on 400 degrees moving on to our overnight oats that we're doing these are protein overnight oats and they're really really good I'm not really measuring anything and I think mason jars look beautiful however I find it really annoying to mix out of mason jars and kind of eat out of one because a top is so narrow so I like using something like this my favorite way to do oats is I put in the O's again not measuring because I kind of know how much liquid to ratio I need I'm also adding one scoop of my chocolate supreme protein I love this protein like the only protein that doesn't bother my stomach now I'm just using plain nonfat Greek yogurt got a little bit of that and don't get so caught up on measurements I know I used to be like that when I first was like learning how to cook and I kind of learned how to eyeball things and you'll see when you mix it if you need more liquid or more yogurt Exedra now I'm just adding some peanut butter this is the all-natural peanut butter from Costco most of everything in this video is from Costco Mitchell in there today and this was like a healthy peanut butter and I've been working out three days a week almost eight months postpartum and when I work out I want peanut butter like it's nobody's business so there we go you can see I started to add some I'm just adding some almond milk again you can use whatever milk you want that all up and I like it a little bit of a thicker consistency and if you don't add more milk now I'm going over to this one this really like overfilled these little containers but you'll see how that oats just really is soak everything up you also have like those super dry protein powder in here so I left my almond milk out because I might need a little bit more almond milk just adding a little bit more almond milk okay so I got to the consistency is that I like and then I'm gonna let them soak overnight so obviously they're over my oats day of I love to add like fresh bananas or some peanuts or like I said some chocolate chips but I just like the difference in textures okay overnight oats are in I just saw that the eggs the time I wanna offer 15 minutes and they still need a little bit longer so I'm gonna check them again at 20 minutes and now I'm just making good old ants on a log using good old jiff so that my kids will eat it to the other peanut butter doesn't have a lot of sweetness to it so regular peanut butter for ants on a log you have to dry them off because the peanut butter just doesn't stay on if they're still wet from when you wash them okay our logs are officially ready for our ants never too old for ants on a log telling you I never tried it need to try it I remember being like thinking like wow if you eat celery you actually burn more calories then you're taking in because it takes more calories to to celery [Applause] all right anti-lover ready I need to put some wax paper to in between them so they don't stick to each other but I think these eggs are finally ready it's been about 25 minutes but yeah they look ready today and eggs they're out and I was putting the rest of these ants on a log away okay so last but not least I'm making our lunches and this is kind of like a burrito bowl and I'm starting off with the quinoa and brown rice this is from Costco but there's bad selfies and types of rice bag searches everywhere and there's different mixtures but I like to have quinoa and brown rice because they're really healthy options so just go ahead and like massage the bag and you're going to rip it open and microwave it for 90 seconds and that is going to save you a ton of time okay so first I'm going to put the quinoa into the bowls again I do like whatever you like the most however much you want quinoa and rice mixture is in some of this chicken if you don't like chicken you can do ground turkey any meat you want or if you don't like meat you can do chickpeas some form of protein this was the meat from just one rotisserie chicken the advantages are chicken all use for other things I really like chicken salad and I just used like a low-fat mayonnaise and I like some grapes and some almonds in it and some celery so that's another really easy lunch that you can do I'm just adding my black beans and now for some peppers I like to have the fresh peppers because it will give this dish like a extra crunch because most of the items in this dish are a softer texture and last but not least I'm adding this also right on top of the chicken I also wanted to mention that these milk prep containers are just Pyrex container that I got them on clearance for three dollars at Target recently like today so the salsa on top of the chicken is going to give the chicken some extra flavor this is just plain rotisserie chicken it is 11 o'clock so that took two hours I will say that's including filming and switching memory cards and charging batteries and things like that so I truly think the most I should ever take you as an hour and a half and it saves you so much time during the week and just make life so much easier and when you have healthy options to grab instead of like go through a drive-thru you will get the body that you're looking for it I bet you enjoyed this video don't forget to subscribe give this video a
