check this out it's a whole flat grilled chicken there are different names for this flat grilled chicken butterfly chicken spatchcock chicken they all mean the same thing you end up cooking the chicken whole but flat on the grill it cooks a little faster cooks evenly the breasts meet and the thighs all cooked the same time and it's fantastic and the presentation frankly is beautiful but you have to start by doing one thing to the chicken and that's taking out the backbone good pair of kitchen shears and away we go so turn the chicken so that the back is facing up and here's the backbone runs in here and we just are gonna take our we're gonna take our shears and we're gonna cut up the side crunch crunch up the side thereby separating it that's the tail bone here right now up this side like if you're weirded out by chicken then this parts gonna weird you out but I'm telling you it's such a great way to do this you're gonna be happy you did and your friends and family are gonna dig it took is pretty cool again perfect now turn them back over but it's too high so here's what you want to do basically want to snap push down and flatten hello my friend look nice even right legs thighs breasts everything's good little wings so now he gets a little oil if it's a he I don't really have no idea how to tell what a chicken is and then only salt and pepper for now you'll see what we're gonna put on him after only salt and pepper and now a little flip and repeat on the inside and here we go straight onto the grill I have the grill set up in a two zone configuration that means one side is super hot and the other side is not I'm gonna sear it a little bit on this side for a couple of minutes flip it over give it another couple and then move it to the low side to continue cooking all right so let's flip it okay I gotta just come clean and tell you something I lost a bunch of skin it's stuck and I'm pissed off it's this area here so it looks like a forest that's been decimated by a fire but what am I gonna do I have no choice I have to go with this it's a delicious way to cook I'm just pissed off right now plus my mic right here has fallen like six times because I'm a hot and sweaty and I keep it on with a little piece of tape so I'm having a bad moment this better end well so here's what we're gonna do come on piss me off now this whole guys coming over here to the low side I'm gonna tell you what I did I deviated usually when I do this I'll start on the low side but today no I had to go start on the hot side oh let's try something different and here's why see this this is a mustard glaze that we make for ribs we've done the recipe it's on the website called mustard ribs so there's two kinds of mustard in here garlic and onion and brown sugar and apple cider vinegar and and hot sauce and we did it and you can watch that didn't need to show you this now because the recipes on the website but now what I wanted to do the idea was sear it and then bring it over here and put it on here so look actually the second to do this Oh like now you can't tell that I ruined it I didn't have to be quite so honest but I can't help myself so we're just gonna put a little based on here right just on the chicken we're gonna shut the lid let it do its thing oh it smells so good and this will slowly start to flavor the chicken and be outstanding when we're done look happens when you cook the key is keep a cool head not like me cuz I'm hot as f right now but if you have guests don't let them see you freak out it always turns out so here's what we do look we shut the lid shut the lid it's on the low side I'm cooking now like an oven it'll be somewhere around 350 ish degrees inside now you're just cooking a chicken with a beautiful amazingly delicious mustard sauce on top I had to go into cooking excellent idea I'll go into cooking I'll teach people how to do stuff they don't know how to make apparently people don't know how to burn the f out of their chicken on the grill and have the skin stick so you're learning that today and we're there so look hello beautiful how gorgeous that is oh my god the juiciness to smell the everything it's unbelievable come on over here look at the gorgeousness of this even these little burnt wingtips are fantastic and it's just a little green because it's beautiful and you know I can't help myself oh my gosh and they'll bite Oh juicy moist look at this piece come on perfect oh my god it's heaven it's heaven the mustard a little bit of sweet that's in there little apple cider vinegar oh my gosh do you see how moist this is it's just amazing look it this is a really beautiful way to cook a chicken so juicy it's tender you're gonna love this and if you do hit like hit subscribe and leave us a comment cuz we love that like I love this you
